still getting settled...

We have had a few rain showers, literally 3 over the last week and the same thing occured about 6 weekd ago along with a damaging mini tornado.
This has been enough to make our area very green and should improve crops for this year, if you go about 25 km down the road it is still a dust bowl, as they missed out and even their ground water supplies are low- a real worry as many, many people are subsistance farmers and depend on the rian to survive.

Dinner- a middle easten feast compliments of the trip to Syria.
the beans are divine-do try them.
Middle Easten Green beans with Walnut Sauce.
The recipe actually came via a very kind host whilst I was teaching in the UK.
  • 450 gm green beans, cut 2.5 cm long, steam, refresh so nice and crunchy.

  • 75 gm walnuts
  • 2 piece garlic
pound together
---------
stir in
  • 1 small onion- fine dice
  • 3T fresh corriander
  • 1 t corriander powder
  • 2 T olive oil
  • 2 T wine vinegar
  • 1 T lemon jiuce
  • 2 t paprika [ i used chilli in India as no paprika- was fine]
  • 1 or 2 t salt
mix until thinck and creamy the stir through beans, top with chopped parsley
Absolutley delicious!!
still rushing around like a crazy woman to get things up to date but you have to eat and cooking is relaxing!
